Ours starts where the drink does — after a heavy black-pepper lunch at a cha chaan teng, when you need something sharp to cut through it. We pushed the lemon forward, peel and acidity both, and let black tea sit underneath.
Deliberately less sweet, in the spirit of ordering it 少甜少冰.
