Chungking Curry Scented Candle
Curry was never originally called curry. What people recognise as the smell of it is masala — the spice blend underneath: turmeric, clove, black pepper, chilli powder.
The owner first met real Indian curry during an internship, from a chef who worked the top-floor canteen. It was punishingly hot and very good, and it made clear that everything eaten before it had been something else. After trying a good many versions since, the curry at Chungking Mansions is still the one.
So that is the reference. It opens on the spices you would expect, then a chilli note comes through to push it towards the real thing rather than a supermarket jar.
