You may reasonably ask where Tuen Mun Ferry Pier is — almost nobody knows it. We did not pick Central or Tsim Sha Tsui because this is where the owner spent their childhood, and for the first place in the series that was the only qualification that counted.

It is quiet: no tourist noise, just dogs and residents walking the waterfront. The main flaw is the traffic getting to Kowloon.

The scent is only loosely marine. We took out most of the fruit and flowers that make an ocean scent cheerful and left sea salt, brine and damp air, kept deliberately light — closer to standing at the pier in the wind than to a bottled seaside.
