Fish Siu Mai Scented Candle
Made with the Siu Mai Concern Group. Everyone in Hong Kong knows what siu mai tastes like; very few people can tell you what one smells like before the soy sauce goes on.
That was the difficulty. The smell is abstract in a way the taste is not, so we worked backwards from the ingredients — reading up on how siu mai is made, and buying a great many siu mai-adjacent products looking for the note.
It ended up layered in two parts. First the wrapper: steamed dough and tapioca starch, built from oils that read as powdery with a little cooked rice behind them. Then the filling — we took the common fish-and-fatty-pork version as the reference and blended toward pork and fish powder, held at a low concentration so it stays the faint meatiness of a steamer basket rather than a plate of food.

Best used — On the first burn, let the surface melt edge to edge. It prevents tunnelling and gives you the full scent every time after.
